Low Carb Chicken Quesadilla


  What you need -
* 1 Rotisserie Chicken
* 1 Tomato
* 3 small Bell Peppers (Tri colored)
* ½ cup crumbled Mexican Queso Fressco
* ½ cup Mexican Salsa
* 4 Reduced Carb Whole Wheat Flour Tortillas
* 2 Tbsp Fat Free Sour Cream
 
 What to do- 
* Dice your Tomato
* Cut Peppers into small rounds
* Cut and shred your Rotisserie Chicken (Use only two Breast)
* Crumble and reserve your Queso Fressco
* Assemble your Quesadilla
* Add your favorite Mexican Salsa
* Use cooking spray to grease your Grill Pan
* Heat your Grill Pan to medium high
* Place your Quesadilla on the grill pan.
* Let the quesadilla cook for 5min per side.
* Remember to turn you Quesadilla 45 degrees to ensure perfect Grill marks
* Use Pizza cutter to cut your Quesadilla into fours
* Garnish using additional Salsa and Fat Free Sour Cream.

(No Grill pan? Simply use a skillet)

Ahi Tuna

Mango Salsa


  What you need -
* 1 Ahi Tuna Steak
* 1 Tomato
* 1Mango
*1 Shalot
* Ginger
* Wasabi Paste
* Soy Sauce

* Pink Salt


 What to do- 
* Dice your Tomato.
* Dice your Mango.
* Peal and Dice your Shalot.
* Combine with Soy Sauce, Ginger, & Wasabi Paste.
* Set Aside. (so the flavors meld together)
* Heat your pan.
* Add Olive Oil to your pan.
* Sear Tuna on all four sides. (only about 20 seconds a side)
* Slice Tuna into 1/4 inch slices.
* Arrange on plater and spoon Salsa over Tuna.
* Garnish with Micro Greens.
* Serve with a side salad of Baby Greens.

(add sesame seeds if you like)

Grilled Shrimp

Zucchini Noodles


  What you need -
* 1 1/2 Pound cleaned and deveined Shrimp
* 4 Cloves of Garlic
* 1/2 cup Chopped Parsely 
*1/2 Cup Mojo Criollo
* 1 Large Zucchni
* 2 Tbsp Classico Sun-Dried Tomato Pesto Sauce & Spread
* Salt & Pepper to taste

 What to do- 
* Peel & Chop Garlic
*Chop up Parsley.
* Add Garlic, Parsley, & Mojo to your Mortar and Pestle.
* Mash together until smooth.
* Set Aside. (so the flavors meld together)
* Heat your grill pan.
* Add Olive Oil to your pan.
* Grill your Shrimp
* Spoon your Garlic, Parsley & Mojo mixture over Shrimp as it Grills .
* Use a Spiralizer to create your Zucchini Noodles
* In a large bowl, mix the Zucchini Noodles and your Pesto until all noodles are coated.
* Plate noodles and serve your Grilled Shrimp over them.

Cuban

Picadillo


  What you need -
* 1 Pound ground Turkey

* 2 Tbl Olive Oil
* 1/2 of an Onion diced
* 1 Green Pepper diced
*1/2 Cup Tomato Sause
* 1/2 Cup Dry White Wine
* 3 Cloves of Garlic
* 1 tsp Cumin

* 1 tsp dry Oregano

* 2 Sason seasoning Packets 

Salt & Pepper to Taste 


 What to do- 
* Dice Onion and Green Pepper.

* Chop up Garlic Cloves

* Heat skillet to mid heat 
* Saute Onions and Green Peppers until soft and translucent.
* Add Ground Turkey and cook until brown.
* Add Dry Oregano
*Add Sason seasoning packets.
* Add 1/2 cup Tomato sause.
*Add 1/2 cup Dry White Wine
* Cook over Medium heat for ten minutes or till wine & tomato sauce have been absorbed 
* Add Green Olives
* Serve over white Rice.

Egg

Muffin cups


  What you need -
* 1 cup Pancetta

* 2 Tbl Olive Oil
* 1/2 of an Onion diced
* 1 cup Green, Red, Yellow Peppers diced
* Low Carb Tortillas
* Goat Cheese
* 8 large Eggs
* 1/2 Cup Parmesan Cheese

​


 What to do- 
* Dice Onion and Peppers.

* Heat Olive Oil to medium high
* Saute Onions and Peppers until soft and translucent.
* Add Pancetta and cook until brown.

* Remove mixture from heat and allow to cool completely.
* Whisk eggs until will combines
*Add cooled Pancetta and Peppers to eggs and combine.

* Place tortillas in muffin tins.
* Add egg mixture to muffin tin.
*Add goat Cheese and top with Parmesan
* Bake at 350 for 25 minutes
